Here’s a recipe you can make if you find yourself with some ripe tomatoes. Gazpacho soup! It’s such an easy recipe too. All you need to do is puree vegetables. No cooking required.

Gazpacho Soup Chilled and Ready to Serve.

I made Gazpacho the other day. Even though it’s normally the end of tomato season (July thru the first frost in Kansas), we’ve been lucky to have really warm October weather.  I found myself with a heap of beautifully ripened tomatoes and wanted to make sure they didn’t go to waste.

Gazpacho soup, if you’re not familiar with it, is a soup that originated in Spain. It’s a soup that is made of pureed fresh vegetables, mostly tomatoes, so it is important when making this recipe, to use tomatoes that are full of flavor and in season. Gazpacho soup, unlike most soups, is served chilled!

What Does Gazpacho Soup Taste Like?

Gazpacho soup is a raw pureed tomato-based soup.

The combination of the tomatoes blended with additional pureed vegetables results in a refreshing soup with a little bit of twang from the addition of sherry vinegar. The best way to describe the taste is fresh. It’s a soup but it’s kind of like a salad. As a matter of fact, I’ve heard that in Spanish cookbooks, it is considered such. Try serving gazpacho soup instead of salad sometime.

Ingredients needed to make Gazpacho Soup

 Pepper, Onion, Garlic
Tomatoes, Cucumber, Pepper, Onion, Garlic
Sherry Vinegar
Bread, Extra VIrgin Olive Oil, Sherry Vinegar

2 Pounds Ripe Tomatoes– It’s important to have in-season ripe tomatoes to make a delicious gazpacho soup. Tomatoes are the primary, and therefore most important ingredient! 

1 Cucumber peeled and seeded

1 Anaheim Pepper

1 Medium Onion– this can be a white, yellow, or red variety.

1 Large or 2 Small Cloves of Garlic

1 Tablespoon Sherry Vinegar

1/4 cup Extra Virgin Olive Oil plus more for drizzling

1/2 Pita Bread torn into small pieces (or a slice of some kind of dense bread) either stale or lightly toasted to dry it out a bit.

How to make Gazpacho Soup

All you do to make Gazpacho soup is puree the ingredients in a high-power blender. Pureeing everything together really well until the ingredients are emulsified is key. That’s it. No cooking required!

Just put the soup in the refrigerator to chill before serving. I like to put the soup into a pitcher so that I can pour the soup into bowls after chilling.

I’ve seen gazpacho soup served in shot glasses which is a nice touch, however, I prefer a larger serving in a bowl.

When serving gazpacho soup, drizzle a bit of extra virgin olive oil or you can top it with whatever combination you like of finely chopped cucumber, tomato, onion, and pepper. The soup itself can be served as a starter or a light main course.

Description

If you have a pile of ripe tomatoes, try making gazpacho soup. This recipe is so easy! All you do is puree the ingredients, chill, and serve!  No cooking required!


Ingredients

2 Pounds Ripe Tomatoes

1 Cucumber peeled and seeded

1 Anaheim Pepper

1 Medium Onion- White, Yellow, or Red variety

1 Large or 2 Small Cloves of Garlic

1 Tablespoon Sherry Vinegar

1/4 cup Extra Virgin Olive Oil plus more for drizzling

1/2 Piece Pita Bread, torn into small pieces (or a slice of some kind of dense bread) either stale or lightly toasted to dry it out a bit.


Instructions

  1. Roughly chop into chunks the tomatoes, cucumber, pepper, and onions. Chop the garlic into diced pieces as well.  Set aside in a bowl.
  2. Add the vegetables to your blender. Start slowly and then once everything starts getting incorporated turn up the speed to high. Once you see that the vegetables are starting to puree, add the sherry vinegar and bread. Then, slowly drizzle in the extra virgin olive oil. Do this while the blender is still on and pureeing everything. The bread and olive oil will help emulsify the soup and make it creamy. 

The ingredients above make enough soup for approximately 8-10 people. If the ingredients don’t all fit into your blender or Vitamix, you’ll need to work in batches and just puree half of the ingredients at a time and then incorporate both batches together. 

 

Notes

It’s important to have in-season ripe tomatoes to make a delicious gazpacho soup. Tomatoes are the primary, and therefore most important ingredient!

Gazpacho soup is served chilled.

Instead of a salad, try serving a bowl of gazpacho soup.
