How to Roast Garlic in the Oven

Description

The best way to roast garlic is in the oven. If you’ve never roasted an entire head of garlic before, you’re in for a delicious treat. Roasted garlic still tastes like garlic, but roasting garlic brings a much milder and somewhat sweet flavor. Roasting garlic is easy and worth learning to make because it adds so much flavor and can be used in many recipes.

Ingredients

Scale
  • 1 or more whole bulbs of garlic
  • 1 Tablespoon of olive oil per bulb of garlic

You’ll need aluminum foil to wrap each individual bulb of garlic.  (Pre-cut sheets of foil are 12″ X 10 3/4″ and the size happens to work well for roasting the garlic.)

Instructions

  1. Preheat oven to 400 degrees.
  2. Prepare the Whole Garlic by removing any loose papery skins from the garlic bulb. At the grocery store, you’ll want to select whole garlic bulbs that are compact. They’ll have fewer loose skins and the garlic cloves will stay together when you cut the bulb.
  3. Wash the garlic and pat it dry.
  4. Cut through the garlic about 1/4 of the way down from the stem, not the roots, which is the widest part of the bulb.
  5. . Place the root side of the garlic down on an aluminum foil square and the top 1/4 of the garlic along the side. Over the cut side of the garlic, drizzle 1 Tablespoon of oil. Seal the garlic in the aluminum foil square by bringing the corners together at the top.

  6. Place the foil packets with the garlic directly on the oven rack (sealed side up) or on a baking sheet or pan.
  7. Check the garlic after 45 minutes of roasting in the oven at 400 degrees to see if it is starting to get soft and brown. It’s best to have some brown caramelization on the garlic and the total cook time can vary depending on the size of the garlic. I find that it takes about 60 minutes on average. It just depends on the size of the garlic. If you have large garlic and it takes longer.

Notes

Oven-roasted garlic is delicious in hummus, baba ganoush, mashed potatoes, roasted garlic butter, and sauces, as a spread on toast, as a pizza topping, and as a sandwich spread. So many things!

Make extra oven-roasted garlic! It can be stored in the refrigerator for a week and stored in the freezer for up to 3 months.

You can use pre-cut aluminum foil sheets or regular aluminum foil. The pre-cut sheets of foil are 12″ X 10 3/4″ and the size works well for roasting the garlic.
