Ingredients

Scale

1. Red onion, rosemary, and pistachio pizza

  • 1 small red onion, thinly sliced into half-moon piece
  • 2 tablespoons chopped rosemary
  • 1/2 cup chopped pistachios
  • 1/2 cup extra virgin olive oil
  • A pinch of kosher salt (plus more to taste)

2. Potato, arugula (optional) pizza

  • 3 small yellow potatoes, boiled, peeled, and sliced
  • A few drizzles of extra virgin olive oil
  • Kosher salt to taste
  • Optional-chopped rosemary
  • Optional-a handful of arugula dressed with a drizzle of extra virgin olive oil and lemon juice

3. Tomato sauce, oregano, basil, and garlic pizza

  • 2 cups whole canned whole tomatoes
  • 2 tablespoons extra virgin olive oil, plus more to drizzle
  • 23 cloves of garlic, thinly sliced
  • a bit of dried oregano
  • 58 leaves of basil

Instructions

1. Red onion, rosemary, and pistachio pizza

Mix the red onion, chopped rosemary, pistachios, a pinch of kosher salt, and olive oil toppings in a small bowl. Evenly spread the topping mixture on the pizza dough. When the pizza comes out of the oven, sprinkle it with a little salt to taste.

2. Potato, arugula (optional) pizza

Toss the sliced potato slices with a few drizzles of extra virgin olive oil, coating them well, and add a bit of kosher salt. Here you can also add some chopped rosemary if you like that flavor. It’s optional.

Layer the potato slices over the pizza dough. You do want to make sure you are generous with the drizzles of olive oil. As you layer the potatoes, with your hands,  make sure the dough is getting coated with some olive oil as well. After the pizza is baked, add additional salt to taste.

Optional and very good is to top the potato pizza with a handful of arugula that has been dressed in a bit of olive oil, lemon, and salt.

3. Tomato sauce, oregano, basil, and garlic pizza

In a bowl or container, crush the whole canned tomatoes with your hands, and add the olive oil. Tear half of the basil leaves into pieces, add to the tomato sauce, and quickly mix with a spoon.

Spread the tomato marinara sauce over your pizza dough, and add thinly sliced pieces of garlic, and a few sprinkles of dried oregano.

Once the pizza is cooked, drizzle it with some olive oil, add a tiny sprinkle of kosher salt to taste, and the remaining pieces of torn basil.
